Spicy Salmon Quesadilla Toastie
Hungry? How about a Spicy Salmon Quesadilla Toastie? This tasty lunch can be made using either a tortilla or bread in the pan or the sandwich press. Chances are you’ll have everything you need in the pantry and fridge already.
A quesadilla is a Mexican dish consisting of a tortilla that is filled primarily with cheese, and sometimes meats, spices, and other fillings, and then cooked on a griddle or stove. Traditionally, a corn tortilla is used, but it can also be made with a flour tortilla.
Did you know: A quesadilla is a Mexican dish that dates back to the 16th century. Traditional quesadillas were made with a corn tortilla that was warmed on a griddle, filled with cheese and various other fillings (meat, vegetables), and then folded over to be eaten by hand.
Tips for crispy quesadillas: Use only a little bit of butter or oil in the pan when cooking the quesadillas. Too much and I find the tortilla ends up soggy and greasy instead of crispy. Just a half teaspoon or so to coat the bottom of the pan ensures a crispy tortilla with golden-brown spots.
