Instructions

1. Preheat oven to 180°C.
2. In a medium saucepan, bring water to boil, add pasta and a pinch of salt and cook until just al dente (still firm to the bite). Drain well and place as many pasta shells as you need in a single layer on a plate. Place them in the fridge until you're ready to stuff.
3. Combine all of the ingredients for the stuffing in a bowl and mix well. Using a teaspoon, stuff the pasta shells with the salmon mixture and return to the plate in a single layer.
4. In a large shallow oven-proof pan or saute pan, heat the oil and add the onion. Gently fry until soft. Add the garlic for a further 30 seconds or until it smells fragrant.
5. Add the passata and stir through, simmer for a further 10 minutes on medium heat, season with salt and pepper and add half of the basil.
6. Add the stuffed pasta (stuffing side up) to the sauce, being careful to not cover with the tomato sauce.
7. Scatter the parmesan over and put in the oven for approximately 15-20 minutes or until the cheese starts to turn golden brown. Garnish with the remainder of the basil and serve immediately.
