Safcol Tuna in Springwater is a source of omega 3 fat, important for your brain and heart health. Omega 3 fat is an anti-inflammatory fat and may help treat some symptoms of rheumatoid arthritis, asthma, and irritable bowel disease. Tuna is also a good source of animal haem iron which is important to allow oxygen to be transported around your body properly.
Adding to the healthy fats in this meal is the extra virgin olive oil which includes monounsaturated fat. This helps to increase your ‘good’ or HDL cholesterol levels. Extra virgin olive oil also has more than 35 different antioxidants which help remove free radicals, preventing damage to your cells.
The eggs add a valuable fat-soluble vitamin called vitamin D. This vitamin is needed to allow calcium to be absorbed properly in your body and plays a role in keeping your immune system strong. Both the onion and garlic have factors called quercetin and allicin which also help improve your immune function.
To further promote a healthy immune system the red capsicum provides you with vitamin C. Vitamin C is also needed for collagen synthesis which is important for healthy skin, joints and ligaments. To keep your heart and prostate healthy, tomatoes have an antioxidant called lycopene.
To make this recipe even more beneficial is the protein boosts both cheese and eggs provide. There is a perfect combination here as the calcium from the cheese needs vitamin D to be absorbed properly in your body, which the egg yolk provides.
